Liège vs Brussels: the difference you should know

    The Liège waffle

Small, dense, irregular in shape, and loaded with pearl sugar that caramelises as it bakes. This is the waffle you eat warm, by hand, walking through the streets. The dough is a brioche dough, richer and firmer than ordinary waffle batter. The pearl sugar (also called 'gruimelsuiker' in the Liège dialect) gives it that irresistible crunch and caramel sweetness.

    The Brussels waffle

Bigger, rectangular, light and airy, almost a cloud with a crisp coat. The batter contains whipped egg whites that give the waffle its typical air pockets. The Brussels waffle is the canvas: you eat it with fresh strawberries, whipped cream, chocolate sauce, or simply a dusting of icing sugar. Its origin? Expo 58 in Brussels, where Maurice Vermersch launched the 'Gaufre de Bruxelles' to a world audience.

    The secret ingredient: Belgian beer

The House of Waffles adds Belgian abbey beer to its waffle batter, a family tradition since 1929. The beer gives the waffle a subtle depth and complexity you can't describe but can taste. The yeast in the beer reacts with the batter, creating a light airiness and an aroma you won't find anywhere else. Which beer do they use? That is the one secret they won't give away.

    Our story

In 1929, Monique Van Waefelghem was born in one of the most beautiful houses in Bruges. Her family name literally means 'House of Waffles' in old Dutch - a name that would determine her destiny.

Mamie Monique, as she was affectionately called, perfected her waffle recipe throughout her entire life. When she passed away in 2015, her grandchildren Anne, Dirk, Julie and Charles didn't let her legacy be forgotten.

In 2018 they opened The House of Waffles on Wollestraat, within walking distance of the famous Belfry. The secret ingredient? Belgian beer in the waffle batter - a family secret spanning generations.
