### De Luikse Wafel

Klein, compact, onregelmatig van vorm, en beladen met parelsuiker die karameliseert tijdens het bakken. Dit is de wafel die je warm eet, uit de hand, lopend door de straatjes. Het deeg is een briochedeeg — rijker en steviger dan een gewoon wafeldeeg. De parelsuiker (ook wel 'gruimelsuiker' in het Luiks) geeft die onweerstaanbare crunch en karamelzoetheid.

### De Brusselse Wafel

Groter, rechthoekig, licht en luchtig — bijna als een wolk met een krokant jasje. Het deeg bevat opgeklopte eiwitten die de wafel die typische luchtbellen geven. De Brusselse wafel is het canvas: je eet hem met verse aardbeien, slagroom, chocoladesaus, of gewoon met een snufje poedersuiker. De oorsprong? Het Expo 58 in Brussel, waar Maurice Vermersch de 'Gaufre de Bruxelles' lanceerde voor een wereldpubliek.

### Het geheime ingrediënt: Belgisch bier

The House of Waffles voegt Belgisch abdijbier toe aan hun wafeldeeg — een familietraditie sinds 1929. Het bier geeft de wafel een subtiele diepte en complexiteit die je niet kunt beschrijven, maar wél kunt proeven. De gisten in het bier reageren met het deeg en creëren een lichte luchtigheid en een aroma dat je nergens anders vindt. Welk bier ze gebruiken? Dat is het enige geheim dat ze niet prijsgeven.

## Our story

In 1929, Monique Van Waefelghem was born in one of the most beautiful houses in Bruges. Her family name literally means 'House of Waffles' in old Dutch - a name that would determine her destiny.

Mamie Monique, as she was affectionately called, perfected her waffle recipe throughout her entire life. When she passed away in 2015, her grandchildren Anne, Dirk, Julie and Charles didn't let her legacy be forgotten.

In 2018 they opened The House of Waffles on Wollestraat, within walking distance of the famous Belfry. The secret ingredient? Belgian beer in the waffle batter - a family secret spanning generations.
